This Biltong quiche makes a great summers evening meal accompanied by a leafy green salad and avocado pear. And why not also cook and cool to add to a picnic basket to enjoy on a sunny UK summers day.

 

The ingredients required to make Biltong quiche are: shortcrust pastry (flour and butter needed together with a little milk or water), 4  eggs, 2 egg yolks, 125ml shredded biltong, 2ml salt, pinch black pepper and nutmeg, 15ml lemon juice, 125ml sour cream.

 

Biltong quiche is made by rolling out the pastry and lining a 230mm quiche dish. Bake blind in a preheated oven at 200 degrees celcius for 10 - 15 minutes. While the pastry is cooking, combine all the remaining filling ingredients and pour into the cooled pastry shell. Cook at 160 degrees for 30 minutes. Garnish with slices of biltong. Yummy!
