Biltong has many culinary uses and added to everyday recipes gives a tasty savoury taste to food. Biltong muffins are ideal for packed lunches and to add to a picnic basket. They are quick to make so can also add a difference to a week-end breakfast.
This biltong muffin recipe requires the following ingredients: 250ml wholewheat flour, 250ml cake flour, 25ml baking powder, 5ml dry mustard, 500ml biltong shredded or sliced, 125ml grated (mature) cheddar cheese, 3 eggs, 200ml milk, 100ml cooking oil, 5ml salt, 15ml lemon juice.
Method for making biltong muffins: combine all ingrediants and mix thoroughly. Spoon mixture into greased muffin tins. Bake in a preheated hot oven at 220 degrees C for 12 to 15 minutes. This recipe makes 12 delicious muffins.
