Lunch Time Biltong Treats
1. Biltong panini sandwich: between the two halves of bread add a layer of pesto sauce followed by mozzarella cheese, cherry tomatoes halved, chopped basil and bite size pieces of biltong. Put on the panini press to toast. If its a week-end meal, this will go down well with a good South African beer.
2. Biltong and cream cheese sandwiches: I used the new tomato and basil Philadelphia cheese spread onto wholewheat granary bread and sprinkled bite size pieces of biltong on top, then sandwiched the two slices of bread together.
3. Biltong pasta bake: Using a lasagna dish add steamed broccoli florets, 300 grams of cooked pasta, tin of chopped tomatoes, two spoons of Mrs Ball's chutney, 60g original biltong, salt and pepper to taste. Mix all ingredients together and sprinkle a generous layer of grated mature cheddar cheese and a handful of crushed crisps (I used cheese and onion flavour). Bake in the oven at 180 degrees for 25 minutes or until the cheese is melted and browned slightly. Serve with a green salad.
